Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large bowl, mix together the all-purpose flour and almond flour.

In a separate bowl, combine the coconut oil, maple syrup, lemon zest, lemon juice, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Divide the dough in half. Roll out one half of the dough between two sheets of parchment paper to about 1/4 inch thickness.

Using a round cookie cutter, cut out cookies and transfer them to the prepared baking sheet. Repeat with the remaining dough.

Use a smaller cookie cutter to cut out the centers of half of the cookies.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Spread raspberry jam on the whole cookies and place the cut-out cookies on top.

Dust with powdered sugar before serving.
