  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, pulse the dates, walnuts, almonds, cashews, pistachios, honey, and cinnamon until well combined.
  3. Roll out the puff pastry sheets on a lightly floured surface.
  4. Spread the date and nut mixture evenly over the puff pastry sheets.
  5. Roll up the pastry tightly into a log shape.
  6. Slice the log into 1-inch thick pinwheels.
  7. Place the pinwheels on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.
  9. Allow the pinwheels to cool for 30 minutes before serving.
