Dates are one of the oldest cultivated fruits and have been a staple food in the Middle East for thousands of years.

Preheat the oven to 180°C (350°F).

In a food processor, pulse the dates, walnuts, almonds, cashews, pistachios, honey, and cinnamon until well combined.

Roll out the puff pastry sheets on a lightly floured surface.

Spread the date and nut mixture evenly over the puff pastry sheets.

Roll up the pastry tightly into a log shape.

Slice the log into 1-inch thick pinwheels.

Place the pinwheels on a baking sheet lined with parchment paper.

Bake for 15-20 minutes or until golden brown.

Allow the pinwheels to cool for 30 minutes before serving.
