Peel and dice the sweet potatoes.

Heat vegetable oil in a pan and add chopped onion, garlic, and ginger. Sauté until fragrant.

Add the diced sweet potatoes and cook for 5 minutes.

Add curry powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well.

Pour in coconut milk and simmer for 15 minutes until the sweet potatoes are tender.

In the meantime, heat a separate pan and cook the paratha bread according to the package instructions.
