Rinse the red lentils under cold water.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, cumin, and turmeric to the pot and cook for a minute.

Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are tender.

Stir in the coconut milk, lemon juice, salt, and black pepper. Cook for another 5 minutes.

Serve the soup hot, garnished with fresh cilantro.
