Rinse quinoa under cold water.

In a saucepan, bring water to a boil. Add quinoa, cover, and simmer for 15 minutes.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

Add carrot, bell pepper, and cauliflower. Cook for 5 minutes.

Stir in frozen peas and curry powder. Cook for an additional 2 minutes.

Add cooked quinoa, coconut milk, lemon juice, and salt. Stir well and simmer for 5 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot, garnished with cilantro.
