Curried Pumpkin & Spicy Green Lentil Soup
Pumpkins are not only delicious but also packed with nutrients. They are a great source of beta-carotene, vitamin C, and fiber.

Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion becomes translucent.

Add curry powder, cumin powder, and turmeric powder. Stir well to coat the onion mixture with spices.

Add diced pumpkin and green lentils. Stir to combine.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes, or until the pumpkin and lentils are tender.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Stir in coconut milk, lime juice, salt, and black pepper. Simmer for an additional 5 minutes.

Serve hot, garnished with fresh cilantro.
