Curried Lentils
Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Rinse the lentils thoroughly and soak them in water for 30 minutes.

In a large pot, heat vegetable oil over medium heat.

Add chopped onions and cook until they turn translucent.

Add minced garlic and grated ginger. Cook for another minute.

Add curry powder, turmeric powder, cumin powder, and coriander powder. Stir well to coat the onions.

Add chopped tomatoes and cook until they soften.

Drain the soaked lentils and add them to the pot. Stir well.

Add coconut milk and salt. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.

Garnish with fresh cilantro before serving.
