Rinse the lentils under cold water and set aside.

Heat oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.

Add the curry powder, turmeric powder, cumin powder, and cayenne pepper. Stir well to coat the onions and spices.

Add the lentils, coconut milk, vegetable stock, tomato paste, lime juice, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.

Serve the curried lentil stew over cooked rice, garnished with fresh cilantro.
