Rinse the lentils and set aside.

Chop the onion, carrot, celery, garlic, and ginger.

In a crock pot, combine the lentils, chopped vegetables, curry powder, cumin, turmeric, cayenne pepper, vegetable stock, coconut milk, lime juice, salt, and black pepper.

Cook on low heat for 4 hours or until the lentils are tender.
