Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add peas, mint leaves, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

Remove from heat and let it cool slightly. Blend the soup until smooth using an immersion blender or a countertop blender.

Return the soup to the pot and stir in lemon juice and coconut milk. Heat over low heat for a few minutes.
