Peel and chop the potatoes, onion, carrots, and celery.

In a large pot, heat olive oil over medium heat.

Add the chopped onion and cook until translucent.

Add the chopped carrots and celery, and cook for another 5 minutes.

Add the chopped potatoes and vegetable broth to the pot.

Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.

Remove from heat and stir in the chopped dill, salt, pepper, lemon juice, and sour cream.

Use an immersion blender to blend the soup until smooth.
