Soak the cranberry beans overnight in water.

Drain and rinse the beans.

In a large pot, heat olive oil over medium heat.

Add chopped onion, garlic, carrot, and celery. Sauté for 5 minutes.

Add the soaked beans, vegetable broth, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

Stir in chopped tomato and cook for an additional 5 minutes.

Remove from heat and let it rest for 10 minutes.

Serve hot, garnished with fresh parsley.
