Wash and chop the collard greens.

In a large pot, bring water to a boil and blanch the collard greens for 2 minutes. Drain and set aside.

In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

Add sun dried tomatoes and cook for 2-3 minutes.

Add the blanched collard greens to the skillet and sauté for 5 minutes.

Season with salt, black pepper, and red pepper flakes.

Remove from heat and drizzle with lemon juice.

Serve hot, sprinkled with grated Parmesan cheese.
