Cut the aubergine/eggplant into 1/2-inch thick rounds.

In a shallow bowl, mix together the cornmeal, salt, paprika, garlic powder, onion powder, and black pepper.

Dip each aubergine/eggplant round into the cornmeal mixture, pressing lightly to adhere the mixture.

Heat olive oil in a large skillet over medium heat.

Fry the coated aubergine/eggplant rounds for about 4-5 minutes on each side until golden brown and crispy.

Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
