Coconut-Raisin Rice Pilaf

Rinse the basmati rice under cold water until the water runs clear.

In a large saucepan, heat the vegetable oil over medium heat. Add the onion, garlic, cinnamon stick, cardamom pods, and bay leaf. Sauté until the onion is translucent and fragrant.

Add the rinsed rice to the saucepan and stir to coat it with the oil and spices.

Pour in the coconut milk and 1 cup of water. Season with salt.

Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove the saucepan from the heat and let the rice rest for 5 minutes.

Fluff the rice with a fork and remove the cinnamon stick, cardamom pods, and bay leaf.

Stir in the raisins.
