Curried Split Pea Soup
Split peas are a great source of plant-based protein and are commonly used in Indian and Asian cuisines.

Rinse the split peas under cold water.

In a large pot, heat some oil over medium heat and sauté the onion, carrot, celery, and garlic until softened.

Add the curry powder and cook for another minute.

Add the split peas and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for about 40 minutes or until the split peas are tender.

Using an immersion blender or a regular blender, puree the soup until smooth.

Stir in the coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.

Serve hot, garnished with cilantro.
