  4. Add red lentils and coconut milk. Bring to a simmer and cook for 20-25 minutes, or until lentils are tender.
  5. Stir in spinach and cook until wilted.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve hot with rice or naan bread.
