  2. In a mixing bowl, combine the shredded coconut, granulated sugar, egg whites, vanilla extract, and salt. Mix well.
  3. Line a baking sheet with parchment paper.
  4. Scoop tablespoon-sized portions of the coconut mixture onto the baking sheet, spacing them apart.
  5. Flatten each portion with the back of a spoon.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes.
  8. Transfer the coconut crisps to a wire rack to cool completely.
  9. Serve and enjoy!
