  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine coconut flour, almond flour, coconut oil, maple syrup, and vanilla extract. Mix well until a dough forms.
  3. Take small portions of the dough and shape them into small castle-like structures.
  4. Place the shaped dough on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  6. Remove from the oven and let them cool for 10 minutes.
  7. In a small bowl, melt the dark chocolate chips in the microwave or using a double boiler.
  8. Dip the cooled coconut castles into the melted chocolate, coating them halfway.
  9. Sprinkle shredded coconut on top of the chocolate-coated part.
  10. Place the coated castles on a wire rack and let them rest for 1 hour, or until the chocolate hardens.
  11. Serve and enjoy!
