  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the tahini, butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll the dough into tablespoon-sized balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  7. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  8. Dip each cooled cookie halfway into the melted chocolate, then place them back on the wire rack to allow the chocolate to set.
