Cook the egg noodles according to the package instructions. Drain and set aside.

In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the mushrooms and beefless strips to the skillet, and cook until the mushrooms are tender and the beefless strips are heated through.

Stir in the paprika, Dijon mustard, vegetable broth, salt, and black pepper. Simmer for 10 minutes.

Remove the skillet from the heat and stir in the sour cream.

Serve the beefless stroganoff over the cooked egg noodles, garnished with fresh parsley.
