Chinese Pancakes

Finely chop the scallions and add them to the batter. Mix well.

Heat a non-stick pan over medium heat and add a tablespoon of vegetable oil.

Pour a ladleful of the batter onto the pan and spread it evenly to form a thin pancake.

Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for another 2-3 minutes.

Repeat with the remaining batter, adding more oil to the pan as needed.
