Chili con carne is traditionally made with meat, but this vegetarian/vegan version, known as chili sin carne, replaces the meat with beans and vegetables while keeping the rich flavors and spiciness intact.

  1. Heat oil in a large pot over medium heat. Add the onion and garlic cloves and sauté until fragrant.
  2. Add the bell peppers and cook until they soften.
  3. Stir in the chopped tomatoes, tomato paste, corn kernels, and spices. Cook for 5 minutes.
  4. Drain and rinse the beans, then add them to the pot along with the vegetable broth. Bring to a boil and then reduce the heat to a simmer. Cover and cook for 20 minutes.
  5. Season with salt and black pepper to taste.
  6. Remove from heat and let it rest for 10 minutes.
  7. Serve hot, garnished with fresh cilantro and a slice of lime.
