Peel and grate the beetroot.

Finely chop the onion, garlic, red chili, and ginger.

Heat vegetable oil in a pan and add cumin seeds, coriander seeds, and mustard seeds. Cook until they start to splutter.

Add chopped onion, garlic, red chili, and ginger to the pan. Cook until the onion turns translucent.

Add grated beetroot, sugar, salt, and white vinegar to the pan. Mix well.

Cover the pan and simmer for 20-25 minutes until the beetroot is cooked.

Remove from heat and let it cool.

Transfer the relish to a sterilized jar and refrigerate.
