Chickpea, Tomato, and Potato Stew
Chickpeas are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.

Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic. Sauté until fragrant.

Add paprika, cumin, salt, and black pepper. Stir well.

Add diced potatoes and cook for 5 minutes.

Pour in vegetable broth and bring to a boil.

Reduce heat and simmer for 20 minutes or until potatoes are tender.

Add canned chickpeas and diced tomatoes. Stir and simmer for another 10 minutes.

Serve hot, garnished with fresh parsley.
