Preheat the oven to 425°F (220°C).

Wash and peel the carrots and potatoes. Cut them into bite-sized pieces.

Cut the zucchini, bell peppers, and red onion into similar-sized pieces.

In a large bowl, combine all the vegetables. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and dried thyme. Toss well to coat.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the veggies are tender and lightly browned.
