Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, diced carrot, sliced celery, and diced red bell pepper. Cook until vegetables are softened, about 5 minutes.

Add ground cumin, ground paprika, ground turmeric, ground cinnamon, salt, and black pepper. Stir well to coat the vegetables with the spices.

Add canned diced tomatoes, drained and rinsed chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, partially covered.

While the stew is simmering, preheat the oven to 400°F (200°C). Cut the pita bread into wedges and arrange them in a single layer on a baking sheet. Bake for 10-12 minutes, or until crispy.
