Unfried rice is a healthier alternative to traditional fried rice, as it uses less oil and incorporates more vegetables.

Heat sesame oil in a large pan or wok over medium heat.

Add chopped onion and minced garlic, and cook until onion becomes translucent.

Push the onion and garlic to the side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked.

Add the mixed vegetables and cook until they are tender.

Add the cooked rice and stir well to combine.

Season with soy sauce, salt, and black pepper. Stir to evenly distribute the seasonings.

Cook for an additional 2-3 minutes, stirring constantly.

Remove from heat and garnish with chopped green onions.

Let it rest for 5 minutes before serving.
