Chickpea and Cauliflower Stew
Chickpeas and cauliflower are both excellent sources of fiber, making this stew a nutritious and filling meal.

Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.

Add the cauliflower florets and cook for 5 minutes, stirring occasionally.

Add the ground cumin, ground coriander, paprika, turmeric, and cayenne pepper. Stir well to coat the cauliflower.

Pour in the diced tomatoes and vegetable broth. Bring to a simmer and let cook for 15 minutes.

Add the chickpeas and season with salt and black pepper. Simmer for another 10 minutes.

Serve the stew hot, garnished with fresh cilantro.
