Preheat the oven to 325°F (163°C).

In a large mixing bowl, combine the oats, walnuts, dried cranberries, honey, coconut oil, cinnamon, salt, and vanilla extract. Stir until well combined.

Spread the mixture evenly onto a baking sheet.

Bake for 15 minutes, then remove from the oven and stir the granola.

Return the granola to the oven and bake for an additional 10 minutes, or until golden brown.

Remove from the oven and let the granola cool completely.

Once cooled, transfer to an airtight container for storage.
