Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine peanut butter, coconut oil, maple syrup, and vanilla extract. Mix well.

Add almond flour, baking soda, and salt to the bowl. Mix until well combined.

Fold in vegan chocolate chips.

Scoop out about 2 tablespoons of dough and roll into a ball. Place the dough balls onto the prepared baking sheet and flatten them slightly with a fork.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
