In a large pot, heat olive oil over medium heat. Add garlic and onion, and sauté until onion is translucent.

Add carrot, celery, thyme, bay leaf, salt, and black pepper. Cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Add leftover vegetables and shredded chicken. Cook for another 10 minutes.

Remove bay leaf and adjust seasoning if needed.
