This is vegan, gluten free and low carb recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 6.

Peel and slice the carrots.

In a pot, bring water to a boil and add salt.

Add the sliced carrots and cook for 15-20 minutes, or until tender.

Drain the carrots.

In a separate pan, heat olive oil.

Add the cooked carrots and honey to the pan.

Cook on medium heat for 5 minutes, stirring occasionally.

Season with salt and pepper.

Remove from heat and garnish with fresh parsley.

Let it rest for 5 minutes before serving.
