Carrot and Coriander Soup
Carrots are rich in beta-carotene, which is converted into vitamin A in the body. This soup is a delicious way to incorporate more vitamin A into your diet.

Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Add the sliced carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the carrots are tender.

Remove the pot from heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the blended soup to the pot and heat over low heat. Stir in the chopped coriander leaves, salt, and black pepper.

Cook for another 5 minutes, stirring occasionally.

Serve hot and garnish with additional coriander leaves, if desired.
