Carnival corn, also known as elote, is a popular street food in Mexico and is often enjoyed during festivals and fairs.

  1. Preheat the grill.
  2. Peel back the husks of the corn, leaving them attached at the base.
  3. Remove the silk from the corn and fold the husks back into place.
  4. Soak the corn in cold water for 10 minutes.
  5. In a small bowl, mix together the melted butter, chili powder, lime juice, cilantro, and salt.
  6. Remove the corn from the water and shake off excess.
  7. Brush the corn with the butter mixture.
  8. Grill the corn for 15 minutes, turning occasionally, until the kernels are tender and lightly charred.
  9. Serve the carnival corn hot with additional butter and lime wedges, if desired.
