Peel and chop the potatoes.

In a large pot, heat the olive oil and sauté the onion and garlic until translucent.

Add the potatoes and vegetable broth to the pot. Bring to a boil and simmer until the potatoes are tender.

In a separate pot, blanch the kale in boiling water for 2 minutes. Drain and chop.

Using a blender or immersion blender, puree the soup until smooth.

Add the chopped kale to the soup and simmer for an additional 5 minutes.

Season with salt and pepper to taste.
