Chili con carne, which means ‘chili with meat’ in Spanish, traditionally contains meat. However, this vegetarian version of chili is just as flavorful and satisfying!

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Cook until softened, about 5 minutes.
  2. Add chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Stir well to coat the vegetables.
  3. Add canned tomatoes, vegetable broth, drained and rinsed beans. Stir to combine.
  4. Bring the chili to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  5. Remove from heat and let the chili rest for 10 minutes.
  6. Stir in fresh cilantro and lime juice.
  7. Serve hot with tortilla chips and a dollop of sour cream on top.
