  1. In a large pot, heat olive oil over medium heat. Add the onion, celery, and bell pepper. Cook until softened, about 5 minutes.
  2. Add the garlic, Cajun seasoning, thyme, bay leaves, salt, and black pepper. Cook for another minute.
  3. Add the white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove the bay leaves and use an immersion blender to partially blend the soup, leaving some beans whole.
  5. Serve hot, garnished with sliced green onions and fresh parsley.
