  2. Add the corn kernels and Cajun seasoning, and cook for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
