Rinse the yellow split peas under cold water.

In a large pot, heat olive oil over medium heat and add sliced onions. Cook until caramelized.

Add minced garlic and cook for another minute.

Add yellow split peas, bay leaves, thyme, salt, and pepper to the pot and stir.

Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes or until the split peas are tender.

Remove bay leaves and blend the soup using an immersion blender or a regular blender until smooth.

Stir in lemon juice.

Serve hot, garnished with chopped parsley.
