Cabbage Noodles

Cabbage noodles are a popular dish in Asian cuisine and are often enjoyed as a healthier alternative to traditional wheat-based noodles.

Boil water in a large pot and cook the rice noodles according to the package instructions. Drain and set aside.

Heat sesame oil in a pan over medium heat. Add garlic and ginger, and sauté until fragrant.

Add carrots and bell peppers to the pan, and stir-fry for 3-4 minutes.

Add cabbage and continue stir-frying for another 2-3 minutes.

Season with soy sauce, salt, and black pepper. Stir well.

Add the cooked rice noodles to the pan and toss everything together until well combined.

Remove from heat and let it rest for 5 minutes.

Serve hot, garnished with spring onions.
