Broccoli Cauliflower Soup
Broccoli and cauliflower belong to the same plant species, Brassica oleracea, but they have been selectively bred to have different appearances and flavors.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Add broccoli and cauliflower florets to the pot. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the vegetables are tender.

Remove from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and stir in coconut milk. Season with salt and black pepper.

Simmer for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
