Wash the bok choy and shiitake mushrooms thoroughly. Cut the bok choy into bite-sized pieces and slice the shiitake mushrooms.

Heat the sesame oil in a pan over medium heat. Add the garlic and ginger, and sauté until fragrant.

Add the shiitake mushrooms to the pan and cook for 2-3 minutes until they start to soften.

Add the bok choy to the pan and stir-fry for another 3-4 minutes until the leaves wilt and the stems are tender.

Season with soy sauce, salt, and black pepper. Stir well to combine.

Remove from heat and let it rest for 5 minutes.
