  4. Add the chopped vegetables, bay leaf, thyme, salt, black pepper, smoked paprika, and cayenne pepper to the crock-pot.
  5. Pour in the vegetable broth.
  6. Cook on low heat for 8 hours or on high heat for 4 hours.
  7. Once cooked, remove the bay leaf and stir in the lemon juice.
  8. Serve hot, garnished with fresh parsley.
