Black-eyed peas are a traditional Southern food often eaten on New Year’s Day for good luck and prosperity.

In a food processor, combine black-eyed peas, onion, garlic, breadcrumbs, flaxseed meal, smoked paprika, cumin, salt, and black pepper. Pulse until well combined but still slightly chunky.

Form the mixture into patties and refrigerate for 10 minutes.

Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.

Toast the burger buns.

Assemble the burgers by placing a patty on the bottom bun, followed by lettuce, tomato, red onion, and pickles.
