Black Bean Pinwheels
Black beans are a great source of plant-based protein and are commonly used in Mexican and Latin American cuisines.

Preheat the oven to 375°F (190°C).

Rinse and drain the black beans.

Finely chop the red bell pepper, green bell pepper, red onion, and cilantro.

In a mixing bowl, combine the black beans, chopped vegetables, ground cumin, chili powder, salt, black pepper, and lime juice. Mix well.

Lay out the whole wheat tortillas and spread the black bean mixture evenly on each tortilla.

Roll up the tortillas tightly and slice them into pinwheels.

Place the pinwheels on a baking sheet greased with olive oil.

Bake for 12-15 minutes, or until the tortillas are crispy.
