In a large mixing bowl, combine the Special K cereal, peanut butter, honey, and vanilla extract.

Mix well until all the ingredients are evenly coated.

Press the mixture into a lined baking dish and smooth the top with a spatula.

Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.

Pour the melted chocolate over the cereal mixture and spread it evenly.

Place the dish in the refrigerator for at least 1 hour to set.

Once set, remove from the refrigerator and cut into bars.
