  1. In a bowl, combine the carrots, daikon radish, rice vinegar, sugar, and salt. Let it sit for 10 minutes to pickle.
  2. Preheat the grill and cook the veggie hot dogs according to the package instructions.
  3. Slice the baguettes lengthwise, but not all the way through. Spread mayonnaise and sriracha sauce on the inside of the baguettes.
  4. Place a cooked veggie hot dog in each baguette and top with pickled carrots and daikon radish.
  5. Add sliced cucumber and fresh cilantro on top.
  6. Serve immediately and enjoy!
