  2. In a large bowl, mash the ripe bananas.
  3. Add the amaranth flour, almond flour, coconut sugar, baking powder, cinnamon, salt, almond milk, coconut oil, and vanilla extract to the bowl. Mix well.
  4. Fold in the chopped walnuts.
  5. Pour the batter into the greased loaf pan.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
