  4. In a baking dish, arrange the sliced vegetables in an alternating pattern, overlapping them slightly.
  5. Sprinkle minced garlic and diced tomatoes over the vegetables.
  6. Drizzle olive oil evenly over the dish.
  7. Sprinkle dried thyme, dried oregano, salt, and black pepper over the vegetables.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender and slightly browned.
  10. Let the ratatouille rest for 10 minutes before serving.
